  • 6 medium sweet potatoes
  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tbsp ancho chili powder
  • 1 tbsp De La Viuda® Original Hot Sauce, plus more for serving
  • 1 tsp ground cumin
  • 1 cup black beans
  • 1 14oz can diced tomatoes
  • ¼ cup chopped cilantro
  • Salt and pepper
  • 2 cups Mexican blend cheese
  • Sour cream for serving
  • Scallions for serving
  • Tortilla chips for serving

Instructions

  1. Preheat oven to 400°F. Prick sweet potatoes with a fork on all sides, and brush with olive oil. Wrap in foil and place on middle rack of oven for 35-45 minutes or until tender.
  2. Meanwhile prepare the turkey chili. In a large skillet add ground turkey and onion. Cook turkey until browned, about 5-7 minutes. Add garlic and cook one minute longer.
  3. Reduce heat to medium-low and add tomato paste, chili powder, hDe La Viuda® Original Hot Sauce and cumin. Cook 1-2 minutes to allow spices to bloom. Add diced tomatoes and black beans and bring chili to a simmer. Stir in cilantro and season with salt and pepper.
  4. Once sweet potatoes are cool enough to handle, split in half. Use the back of a spoon press an indent into the potato. Fill with chili and top with cheese, sour cream, scallions and crushed tortillas.
