Hot Honey Baked Salmon with Spicy Guacamole and Black Bean Salsa

  • 1 tbsp olive oil
  • ½ cup honey
  • 1 tbsp De La Viuda® Original Hot Sauce
  • 2 garlic cloves, minced
  • 2 tsp lime juice
  • 2 lb salmon filet
  • Salt and pepper

Spicy Guacamole

  • 2 medium avocados
  • 2 tbsp chopped red onion
  • 1 garlic clove, minced
  • 3 tsp De La Viuda® Green Pepper Hot Sauce
  • ¼ cup cilantro, chopped
  • ½ lime, freshly squeezed
  • ½ Salt and pepper

Black Bean Salsa

  • 1 14oz can black beans, rinsed and drained
  • 2 small tomatoes, chopped
  • ⅓ cup chopped red onion
  • ½ chopped red pepper
  • 1 jalapeño, seeded and diced
  • ¼ cup cilantro, chopped
  • 2 tbsp lime juice
  • 1 garlic clove, minced
  • 1 tsp cumin
  • Salt and pepper

Instructions

  1. Preheat oven to 425°F.
  2. In a small bowl combine honey, De La Viuda® Original Hot Sauce, garlic and lime.
  3. Place your salmon on a foil-lined baking tray and season well with salt and pepper. Brush with olive oil. Spoon half of the hot honey mixture over the salmon. Roast for 15-20 minutes or until the salmon is just cooked and flakes easily.
  4. While the salmon is cooking prepare the guacamole and black bean salsa. In a large bowl combine avocado, onion, garlic, De La Viuda® Green Pepper Hot Sauce, cilantro, lime and salt. Smash using a potato masher. Check for seasoning and adjust when needed. Set aside.
  5. For the black bean salsa, add the beans, tomatoes, onions, cilantro, cumin, smoked paprika, garlic and lime. Season with salt and pepper.
