The soup is on and it’s never been a better time to grab a spoon…or a fork. The depths of flavor are accentuated by the warm addition of De La Viuda® Green Pepper Hot Sauce. This hearty meal will bring comfort to the soul.

  • 2 tbsp butter
  • 1 small onion, diced
  • 2 poblano peppers, diced
  • 2 garlic gloves, minced
  • 2 tsp De La Viuda® Green Pepper Hot Sauce, plus more for serving
  • 1 tsp cumin
  • 2 10oz cans red enchilada sauce
  • 4-5 cups chicken broth
  • 1 lb chicken breasts, boneless skinless
  • 1 14oz can black beans, drained
  • ⅓ cup cilantro, chopped
  • 1 avocado, pitted and diced
  • Shredded cheddar cheese for serving
  • Tortilla chips for serving
  • Sour cream for serving

Instructions

  1. Heat butter, onion and poblano in a large pot over medium heat. Cook 5 minutes or until onions are translucent and peppers are soft.
  2. Stir in garlic and cook another minute or until fragrant. Stir in cumin and De La Viuda® Green Pepper Hot Sauce.
  3. Pour in the enchilada sauce and chicken broth and bring to a boil.
  4. Add the chicken, cover and reduce heat to low. Simmer 20 minutes or until the chicken is cooked through. Remove and shred the chicken.
  5. Stir in black beans. Remove from heat and stir in the cilantro.
  6. Divide the soup amongst bowls and top with tortilla chips, avocado, sour cream and cheese.
  7. Drizzle with additional De La Viuda® Green Pepper Hot Sauce if desired.
